Crowned with 5 stars, this romantic address nestling on the hills beyond Vence offers a breathtaking panoramic view as far as the Mediterranean coast. For a peaceful stopover, a gastronomic lunch or dinner, the Château Saint-Martin & Spa basks in an atmosphere of sheer excellence.


In the midst of 34.6 acres with 300 century-old olive-trees stands a castle dating back to the Roman era, magnificently restored by renowned contemporary architect Luc Svetchine. A member of the prest­igious Oetker Hotel Collection - a guarantee of excellence - the hotel, managed for the past few months by Duarte Bon de Sousa, comprises 40 Junior Suites, six private villas and a spa signed La Prairie. For fans of gastronomy, the Château boasts three restaurants orchestrated by the new chef, Franck Ferigutti (“Meilleur Ouvrier de France 2000”), seconded by Nicolas Davouze (“Bocuse d’Or” 2014). Crowned by a star in the Michelin Guide, the refined setting of Le Saint-Martin proposes great classics of French cuisine, interpreted in modern style and based on local produce. In summer, L’Oliveraie takes its place in the gardens, at the edge of the pool. Comfortably installed in the shade of the olive-trees, guests enjoy delicacies from the grill, brimming with sun-blessed flavours. This year, the Château Saint-Martin has inaugurated its new panoramic restaurant : Le 180°. With classic decor featuring an open kitchen and a terrace offering a stunning view bathed in sunlight, guests are treated to chic bistro-style cuisine for lunch and dinner, based on local and regional produce : royal sea-bass with lemon and black olives, oriental-style shank of lamb, traditional stuffed tripe and trotters, calamari Sétoise-style... As for the irresistible desserts concocted by Florent Margaillan, they surprise for their original interpretation of the classics, some even offering the discovery of unexpected flavours... All the ingredients seem to be united to hope for a second star to be won soon.
